This paper discusses the key role of food safety standards in food safety management, and analyzes it from four aspects: legal status, application, problem and optimization strategy. First of all, food safety standards have a legal status in food safety management. They are not only a part of government regulations, but also include international food safety standards. These legal positions ensure that businesses must comply with a range of stringent food safety requirements to protect consumer health and ensure food quality. Secondly, the article discusses the application of food safety standards in the actual food safety management. These standards include requirements for food production, processing, transportation, storage and sales, and help to establish a food supply chain with traceability, controllability and credibility. Food businesses must pay close attention to and adhere to these standards to ensure that their products meet the highest quality and safety standards. Then, the article points out the problems of food safety standards in practice. In general, food safety standards play a key role in food safety management, but they face some challenges. Through a reasonable legal status, effective application, problem solving, and the adoption of optimization strategies, we can better guarantee food safety, protect the health of consumers, and promote the sustainable development of the food industry.
