摘要
为了建立蜂蜜检测方法以及进行真伪鉴别,以市场及蜂农处购买的共计40个不同产地、不同蜜源的蜂蜜为研究样本,通过近红外光谱法对真实蜂蜜和一定比例的糖浆进行测定,对比二者区别。利用电感耦合等离子质谱仪(ICP-MS)和液相色谱仪对蜂蜜中的26种不同元素和8种酚酸及黄酮的种类及含量建立方法并对其进行方法学验证,应用已建立的方法对所购买的样本测定分析。通过实验结果可知,红外光谱法对于蜂蜜的掺杂检测能够提供一定的支持,不同种类、不同产地的蜂蜜样本中元素含量及酚酸和黄酮的含量有所差异。测定结果可为今后研究及方法制定提供理论依据。
Abstract
In order to establish a honey detection method and identify authenticity, a total of 40 honey samples from different origins and sources purchased by the market and bee farmers were used as research samples. Real honey and a certain proportion of syrup were measured using near-infrared spectroscopy to compare their differences. A method was established using inductively coupled plasma mass spectrometry (ICP-MS) and liquid chromatography to determine the types and contents of 26 different elements, 8 phenolic acids, and flavonoids in honey. The established method was applied to determine and analyze the purchased samples. According to the experimental results, infrared spectroscopy can provide certain support for the doping detection of honey, and the element content, phenolic acid and flavonoid content in honey samples from different types and origins vary. The measurement results can provide a theoretical basis for future research and method development.
